Kaneko Hannosuke is a real person born in Asakusa and a leading figure in Japanese cuisine behind the saying “Japanese culture is in the food.” His recipe book passed down to his grandson, Kaneko Shinya, contained instructions on how to make the “Edomae rice bowl sauce,” which has been kept a family secret for generations. With this special sauce, they’ve created and perfected the Edo-style tendon that goes in perfect harmony, using freshly sourced seafood and a traditional tempura frying technique.
